Purpose of the 3 cooling legs:
Angel food cake needs to be cooled upside down so it doesn't collapse on itself. The attached feet on vintage Angel food cake tins allows for airflow while it cools, but they are not necessary to make this type of cake, it just makes it easier. Before pans came with the feet, people would rest the cake upside down using a bottle to prop it up.
